Laboratorio Tortellini's Panzerotti with Porcini Mushrooms is a gourmet frozen egg pasta filled with a flavorful blend of porcini mushrooms and ricotta cheese. These panzerotti are made from high-quality durum wheat semolina and barn eggs, resulting in a golden, supple pasta with a rich filling. Shaped in the signature half-moon design, the pasta features bordered edges and a savory brown filling with visible pieces of porcini and mixed mushrooms.

  • Filling Composition: The filling constitutes 60% of each panzerotto, with 32% mixed mushrooms (Agaricus Bisporus, Pleurotus Ostreatus, Lentinus Edodes, Pholiota Nameko) and 2% porcini mushrooms (Boletus edulis). The mixture is enhanced with ricotta, Grana Padano DOP cheese, breadcrumbs, and sunflower oil, offering a deep, earthy mushroom flavor.
  • Pasta Composition: The pasta is crafted from durum wheat semolina and barn eggs (18.5%), ensuring a durable yet soft texture that complements the rich mushroom filling.
  • IQF (Individually Quick Frozen) Process: Each panzerotto is frozen using the IQF method, which preserves the taste, texture, and freshness while preventing clumping, making portion control and handling effortless.

Cooking Instructions:

  • Boil salted water, and without defrosting, add the frozen panzerotti to the water.
  • Cook for 5-6 minutes, stirring occasionally, then drain and season as desired.
  • For optimal results, use one liter (33.8 fl oz) of boiling water for every 100 grams (3.5 oz) of pasta.
