Laboratorio Tortellini's Panzerotti with Ricotta & Spinach is a premium Italian frozen egg pasta filled with a rich and creamy ricotta and spinach mixture. These panzerotti are crafted from durum wheat semolina and barn eggs, forming a tender yet firm pasta with a deep yellow hue. Shaped like half-moons with intricately bordered edges, they present an inviting appearance with vibrant green spinach pieces clearly visible within the creamy white ricotta filling.

  • Filling Composition: The filling makes up 60% of each panzerotto, consisting of 63% fresh ricotta (whey, milk, salt), 21% spinach, and a touch of Grana Padano DOP cheese to add a nutty, savory flavor. The filling is balanced with breadcrumbs made from soft wheat flour and seasoned with salt.
  • Pasta Composition: The outer pasta is made from 100% durum wheat semolina and barn eggs (18.5%), providing a robust yet pliable texture that complements the softness of the filling.
  • IQF (Individually Quick Frozen) Process: Each panzerotto is frozen using the IQF process, ensuring the pasta maintains its texture, flavor, and freshness while preventing clumping. This allows for easy portion control and handling, preserving the quality until ready to cook.

Cooking Instructions:

  • Boil salted water, and without defrosting, add the frozen panzerotti to the water.
  • Cook for 5-6 minutes, stirring occasionally, then drain and season as desired.
  • For optimal results, use one liter (33.8 fl oz) of boiling water for every 100 grams (3.5 oz) of pasta.
