Shaped like traditional cappelletti, these pasta pieces are generously sized, with a golden exterior made from high-quality durum wheat semolina and barn eggs. The filling, featuring a blend of creamy cheeses and subtle spices, delivers an authentic taste of Italy’s Romagna region.

  • Filling Composition: The filling makes up 52% of each piece, combining Casatella (a soft cheese made from milk and cream), ricotta, Grana Padano DOP, Parmigiano Reggiano DOP, and other cheeses for a savory, creamy filling. Breadcrumbs and spices complete the flavor profile, adding texture and depth.
  • Pasta Composition: The pasta is made from 100% durum wheat semolina and barn eggs (18.5%), providing a firm yet delicate texture to pair with the smooth filling.
  • IQF (Individually Quick Frozen) Process: Each cappelletto is frozen using the IQF method, preserving the pasta’s flavor, texture, and freshness while preventing clumping for easy portioning and handling.

Cooking Instructions:

  • Boil salted water, and without defrosting, add the frozen Grancappelletto to the water.
  • Cook for 4-5 minutes, stirring occasionally, then drain and season as desired.
  • For optimal results, use one liter (33.8 fl oz) of boiling water for every 100 grams (3.5 oz) of pasta.
