The Peranzana cultivar is an olive with a double attitude, both for oil and for eating. The olives are pitted only after the right time of maturation and immersed in oil extra virgin olive oil of the same variety to enhance its characteristic flavors. They are ideal for different courses, like fish, focaccia, salads and first courses.
